One&Only Palmilla

“Haciendas with red-tiled roofs cascade down a rocky promontory to a protected cove on the Sea of Cortez.”

Our Review

Location & Setting

Nestled on the shores of the Sea of Cortez near San José del Cabo, One&Only Palmilla balances Baja’s desert backdrop with lush, manicured gardens and serene ocean horizons. The resort’s footprint spreads along a rocky headland, creating a sense of privacy while still feeling connected to the region’s lively dining and art scene.

Unlike many beaches in the area, the resort fronts one of Los Cabos’ rare swimmable coves at Pelican Beach. Gentle waters, soft sand, and attentive beach service make this an easy place to linger between dips, sunrise strolls, and seasonal whale watching just offshore.

Suites & Spaces

Accommodation is set in low-rise, casita-style buildings that step down toward the water, so rooms and suites open to furnished terraces or balconies with clear blue views. Interiors blend local craft with polished comforts—marble bathrooms, generous closets, and thoughtful touches—creating spaces that feel both elegant and relaxed.

Higher categories add standouts such as private plunge pools and expansive patios, while the signature villas elevate things further with full residential amenities. Throughout, service remains discreet yet comprehensive; details like 24-hour butler attention and in-room espresso keep day-to-day living easy.

Dining & Drinks

The culinary program is a highlight. At Seared, the resort’s wood-fired grill and steakhouse, prime cuts share the spotlight with impeccably handled seafood and a deep cellar. For lighter, ocean-leaning flavors, Suviche pairs pristine sashimi and sushi with ceviche and a focused selection of sakes.

Agua leans into coastal Baja cooking—bright, produce-forward plates, tortillas made in view of the tables, and a breezy, cliff-edge setting that makes lunch stretch pleasantly into late afternoon. Casual poolside venues keep you fueled between swims, and sunset cocktails are best taken with the surf as a soundtrack.

Wellness, Beach & Pools

The resort’s spa is a destination in itself: a 22,000-square-foot sanctuary set in tropical gardens with 13 private treatment villas, many featuring plunge pools, outdoor showers, and swaying day beds. Rituals draw on regional botanicals, and the yoga and wellness garden adds open-air calm to the mix.

Two ocean-facing infinity pools anchor leisurely days, while the protected cove at Pelican Beach invites proper sea swimming—something uncommon along this dramatic coastline. Between laps and loungers, the overall rhythm here is unhurried: read, float, repeat.

Golf & Experiences

Golfers gravitate to the on-site Palmilla Golf Club, a classic Jack Nicklaus design comprising 27 championship holes across the Mountain, Arroyo, and Ocean nines. Expect sweeping desert-to-sea vistas, elevation changes, and strategic carries over arroyos—plus the thrill of fairways that trace the shoreline.

Beyond the course, the concierge can line up snorkeling in calm waters, coastal hikes, and easy outings into San José del Cabo for galleries and farm-to-table dinners. Return to the accommodation for a quiet nightcap and the sight of moonlight on the water—an understated finale that sums up the property’s charm.
